Chinese Vegan Chicken SaladThis recipe comes from Dawn in our Newport, RI Store

Sauté in a skillet:
1 package Beyond Meat Chicken Strips, defrosted and cubed
3 tsp tamari
1 tsp fresh garlic, minced
1 tsp toasted sesame oil

Let cool.

Salad Ingredients:
3 cups green cabbage, chopped
½ cup carrots, grated
1 ¼ cups broccoli, cut into florets
¾ cups red peppers, ½ inch diced
1 10.7oz organic mandarin orange sections, cut in half and reserve the juice
¼ cup and 2 Tbsp scallions, thinly sliced
¼ cup cilantro, finely chopped
¼ cup tamari almonds, crushed
½ Tbs black sesame seeds

Dressing Ingredients:
¼ cup and 2 Tbsp reserved mandarin juice
¼ cup tamari
1 Tbsp brown rice vinegar
2 Tbsp toasted sesame oil
½ Tbsp fresh ginger, minced
¼ tsp salt

Whisk all dressing ingredients together until emulsified. Finally, mix together all salad ingredients and add dressing.  Enjoy!
